Resumo: As a complex and dynamic activity, tourism involves socioeconomic, sociocultural and environmental implications, playing an important role in the territorial reconfiguration and cultural transformation of the territories where it occurs. In Brazil, the launch of the Tourism Regionalization Program (PRT) in 2004 (Brazil, 2005) encouraged the organization of Brazilian municipalities around tourism as a local development strategy, decentralizing tourism policy and strengthening the articulation between the national and regional spheres with a focus on valuing the territorial and local potential, including tangible and intangible cultural heritage. With the support of the Ministry of Tourism and the State Tourism Secretariats, tourist circuits were organized and adapted to regional specificities, promoting and integrating municipal tourism products and services. Thus, in 2006, Caminhos do Frio was launched. It connected the cities of the Brejo region of Paraíba. This included Bananeiras, which consolidated itself as a tourist destination. This was also supported by municipal tax exemptions that favored real estate developments focused on leisure and tourism, especially horizontal condominiums. This thesis analyzes how, in this context, the forms of food production and consumption in Bananeiras were transformed, both in its “regional/local” culinary expression and by the emergence of differentiated restaurants that appeared in that municipality from 2010 onwards. The methodology adopted included participant observation in fairs, bars, restaurants and local festivities, in addition to 29 interviews with former municipal managers, former secretaries of Culture and Tourism, merchants, local cooks, chefs, public and private agents, members of the Brejo Paraíba Tourism Forum and local residents, all impacted by the phenomena of Caminhos do Frio and horizontal condominiums. The data was collected throughout the years 2023 and 2024, with supplementary collections being carried out to complement the information. The research highlights how these events transformed the cultural, economic and gastronomic dynamics of Bananeiras, contributing to the construction of a new local identity, impacting the entire region of Brejo Paraibano. Although the theme presents itself as part of a dynamic tourism project, it involves the municipal and state political-economic fields and is constantly being reconfigured.

Au Brésil, le lancement du Programme de régionalisation du tourisme (PRT) en 2004 (Brésil, 2005) a encouragé l’organisation des municipalités brésiliennes autour de l’activité touristique comme stratégie de développement local, en décentralisant la politique touristique, en renforçant l’articulation entre les sphères nationale et régionale en mettant l’accent sur la valorisation du territoire et du potentiel local, y compris le patrimoine matériel et immatériel. Avec le soutien du Ministère du Tourisme et des Secrétariats d’État au Tourisme, des circuits touristiques ont été organisés et adaptés aux spécificités régionales, promouvant et intégrant les produits et services touristiques municipaux. Ainsi, en 2006, Caminhos do Frio a été lancé, reliant les villes du Brejo Paraibano, y compris Bananeiras, qui s'est consolidée comme une destination touristique également soutenue par des exonérations fiscales municipales qui ont favorisé les développements immobiliers axés sur les loisirs et le tourisme, en particulier les condominiums horizontaux. Cette thèse analyse comment, dans ce contexte, les formes de production et de consommation alimentaire à Bananeiras ont changé, tant dans son expression culinaire « régionale/locale » (Sales, 2012) qu'à travers l'émergence de restaurants différenciés qui sont apparus dans cette municipalité depuis 2010. La méthodologie adoptée comprenait l'observation participante dans des foires, des bars, des restaurants et des festivités locales, en plus de 29 entretiens avec d'anciens gestionnaires municipaux, d'anciens secrétaires à la Culture et au Tourisme, des commerçants, des cuisiniers locaux, des chefs, des agents publics et privés, des membres du Forum de Tourismo do Brejo Paraibano et des résidents locaux, tous impactés par les phénomènes des Caminhos do Frio et des condominiums horizontaux. No Brasil, o lançamento do Programa de Regionalização do Turismo (PRT) em 2004 (Brasil, 2005) incentivou a organização dos municípios brasileiros em torno da atividade turística como estratégia de desenvolvimento local, descentralizando a política turística, fortalecendo a articulação entre as esferas nacional e regional com foco na valorização do território e das potencialidades locais, incluindo patrimônios materiais e imateriais. Com o apoio do Ministério do Turismo e das Secretarias Estaduais de Turismo, circuitos turísticos foram organizados e adaptados às especificidades regionais, promovendo e integrando os produtos e serviços turísticos municipais. Assim, em 2006, foi lançado o Caminhos do Frio conectando as cidades do Brejo paraibano, incluindo Bananeiras, que se consolidou como destino turístico apoiando-se também em renúncias fiscais municipais que favoreciam empreendimentos imobiliários voltados ao lazer e turismo, especialmente os condomínios horizontais. Esta tese analisa como se transformaram, nesse contexto, as formas de produção e consumo de alimentos em Bananeiras, tanto na sua expressão culinária “regional/local” quanto pelo surgimento de restaurantes diferenciados que surgiram naquele município a partir de 2010. A metodologia adotada incluiu a observação participante em feiras, bares, restaurantes e festividades locais, além de 29 entrevistas com ex-gestores municipais, ex-secretários de Cultura e Turismo, comerciantes, cozinheiros locais, chefs de cozinha, agentes públicos e privados, membros do Fórum de Turismo do Brejo Paraibano e moradores locais, todos impactados pelos fenômenos do Caminhos do Frio e dos condomínios horizontais. Os dados foram coletados entre 2023 e 2024, com algumas incursões adicionais para complemento de informações. A pesquisa evidencia como esses eventos transformaram a dinâmica cultural, econômica e gastronômica de Bananeiras, contribuindo para a construção de uma nova identidade local, impactando toda região do Brejo Paraibano.
