Diversas religiões adotam o jejum para se purificar, desligando-se das necessidades básicas, como comer e beber, para estabelecer uma conexão maior com Deus. O Cristianismo possui como uma das suas maiores comemorações a Páscoa, representando a ressurreição de Cristo, pregando a Quaresma como uma preparação para esse momento. A Quaresma é marcada por penitências, jejuns, orações e principalmente pela abstenção de carne vermelha. A carne vermelha possui inúmeros nutrientes como proteínas, minerais e vitaminas essenciais para o organismo humano. O trabalho consiste em uma revisão bibliográfica e utiliza como suporte as referências teóricascomo artigos sobre o tema escolhido para identificar e verificar a relação nutricional das restrições alimentares durante a quaresma para a saúde humana.Religions are characterized by the various forms of food use, besides the meanings and values added to them. Many religions adopt fasting to purify themselves, disconnecting from basic needs such as eating and drinking, to establish a greater connection with God. Christianity has as one of its greatest celebrations Easter, representing the resurrection of Christ, preaching Lent as a preparation for that moment. Lent is marked by penances, fasts, prayers and especially by the abstention of red meat. Red meat has numerous nutrients such as proteins, minerals and vitamins essential for the human body.
