Resumo: In Brazil, olive oil is defined as a product obtained from the fruits of the olive tree Oleaeuropaea L. and it is already configured in the international scenario as the second largest importer of olive oil. Olive oil has been used in cooking for thousands of years. Rio Grande do Sul is the state with the highest production of olives. With the intention of improving the cultivation and the quality of the final product, it is customary to use pesticides. In Brazil, the current legislation is only for olives with an MRL of 9 pesticides. Thus, the uses of pesticides that are not allowed end up being used. Therefore, to guarantee the quality of olive oils, developing an analytical method that allows the determination of pesticides in olive oil is essential. Thus, this research developed and validated an analytical method for the determination of 79 different pesticides in olive oil, using gas chromatography coupled to tandem mass spectrometry (GC-MS/MS). The method was validated for 79 compounds, and the limit of quantification (LOQ) ranged from 25 to 100 μg kg-1 and the limit of detection (LOD) from 7.5 to 30 μg kg-1 within the acceptance range used. which was 70 to 120% with RSD <20%. The method was applied to 18 samples of olive oil. Of these, 7 olive oil samples showed pesticide residues of different classes and characteristics at concentrations ranging from 8.91 to 689.41 μg kg-1. Considering the results obtained, the proposed method proved to be efficient in the determination of 79 pesticides in olive oil.

O azeite de oliva tem sido utilizado na culinária a milhares de anos. O Rio Grande do Sul é o estado com maior produção de azeitonas. Com a intenção de melhorar o cultivo e a qualidade do produto final, costuma-se empregar agrotóxicos. No Brasil, a legislação vigente é apenas para azeitonas com LMR de 9 agrotóxicos. Assim, os usos de agrotóxicos não permitidos acabam sendo utilizados. Portanto, para garantir a qualidade dos azeites de oliva, desenvolver um método analítico que permita determinar agrotóxicos em azeite de oliva é fundamental. Dessa forma, essa pesquisa desenvolveu e validou um método analítico para determinação de 79 diferentes agrotóxicos em azeite de oliva, empregando cromatografia gasosa acoplada à espectrometria de massas em série (GC-MS/MS). O método foi validado para 79 compostos, sendo que o limite de quantificação (LOQ) variou de 25 a 100 μg kg-1 e o limite de detecção (LOD) de 7,5 a 30 μg kg-1 dentro da faixa de aceitação utilizada que foi de 70 a 120% com RSD <20%. Aplicou-se o método para 18 amostras de azeite de oliva. Dessas, 7 amostras de azeite de oliva apresentaram resíduos de agrotóxicos de diferentes classes e características em concentrações que variam de 8,91 a 689,41 μg kg-1.
