Resumo: Thisresearchaddressestheproductionofbiodegradablewaste in some restaurantsof Uberlândia city (MG)andproposes a modelof reverse logistics for thesewastesthroughcomposting. Both thechoiceofprinciplesandfieldresearchdevelopmentweremadethanksto a methodologicalliteraturereview. Thus, conceptssuch as wastesorting, composting, reverse logisticsandwaste in Uberlândia, as well as thequantificationofthebiodegradablewasteproductionoccurring in its restaurants, whichisnecessary for the management ofthosewastesinitiatives, werepresented. First, a diagnosisofthewasteproduction in restaurantswasdonethroughvisitsandsemi-structured interviews, photographicrecordsandwasteweighting. In a second time, visitsand interviews bothatthe Municipal City Hall, and some companyresponsible for urbancleaningandcompostingcompanieswerealsodonethroughoutthecity. Then, theanalysisoftheresultsledtothedevelopmentof a reverse logistics proposal, through a publicprivatepartnershipbetweenthe City Hall and a compostingcompany. Finally, thisresearchwasconcludedbytheidentificationofallparticipatingsubjectsthatisessential for theimplementationandtheexpectedfunctionalityofthisproposal.

Finally, thisresearchwasconcludedbytheidentificationofallparticipatingsubjectsthatisessential for theimplementationandtheexpectedfunctionalityofthisproposal.Esta pesquisa aborda a produção de resíduos biodegradáveis nos restaurantes da zona urbana de Uberlândia (MG) e propõe um modelo de logística reversa para esses resíduos através da compostagem. Para tanto foram utilizados como princípios metodológicos a revisão bibliográfica e a pesquisa de campo. No intuito de refletir esse contexto foram apresentados conceitos como coleta seletiva, compostagem, logística reversa e ainda, produção de resíduos em Uberlândia, produção de resíduos biodegradáveis em restaurantes e iniciativas existentes para a gestão dos mesmos. Realizou-se um diagnóstico da produção dos resíduos nos restaurantes através de visitas e entrevistas semiestruturadas, registro fotográfico e pesagem dos resíduos. Além disso, foram realizadas visitas e entrevistas na Prefeitura Municipal; empresa responsável pela limpeza urbana e algumas empresas de compostagem na cidade.
