Prevalência de Campylobacter spp. e Enterococcus spp. no ambiente de criação de frango de corte

Resumo: Last decades, the interest on food safety has grown. Thus, the control of microorganisms such as Campylobacter e Enterococcus at broiler farm has been seen as crucial to reduce zoonosis from meat. The aims of this study were to realise the characterisation of rearing birds broiler farm; to evaluate the microbiological quality of rearing bird environment from conventional and automated systems in winter and in summer seasons; to evaluate the sensibility of Campylobacter jejuni e Enterococcus faecium e E. faecalis to different antibiotics. It was also to suggest ways to control for minimising contamination and dissemination by these bacteria among batch and slaughter units before consumers have been affected. From results obtained, it was observed that the seasons did not influence in the incidence of contamination by Campylobacter e Enterococcus on both systems. The answers of survey applied and also from visual evaluation at broiler farm, it could be noted that poor conditions of hygienic in association with lack of a biosafety program were factors that could allow high level of contamination by different micro-organisms. After all-in-all-out time, on both systems, the presence of Campylobacter and Enterococcus was not detected. It was also observed that their presence was independent for growth systems or year seasons during rearing birds time. Most of the isolates from Campylobacter were identified as C. jejuni by biochemical profile. In relation to the isolates from Enterococcus, 90% were E. faecium and 10 % were E. faecalis. The resistance profile the most peercentage obtained for resistance were observed for the following antibiotics: sulfonamide, tetracycline, erythromycin, penicilin. Whist, the isolates of E. faecium and E. faecalis the highest resistance was observed for penicilin. From the results obtained It was observed that proper measures have to take to reduce the contamination by these pathogens from hatchery to broiler farm and processing industry. Thus, control programmes need to be place with training of workers and applying Good Agricultural Practice to obstruct or to minimise by pathogens contamination cycle. It is also suggested that, in Brazil, new studies have to be done to know about the resistance profile from these and other important micro-organisms from animals and human being in order to establish control strategies for antibiotics consume on animal production.

Os objetivos deste trabalho foram realizar a caracterização de granjas de criação de frango de corte; avaliar a qualidade microbiológica do ambiente de criação de frangos de corte nos sistemas de criação convencional e automatizado, nas estações de inverno e verão; avaliar o grau de resistência a diferentes antibióticos de Campylobacter jejuni e Enterococcus faecium e E. faecalis e propor mecanismos de controles que permitam minimizar a contaminação e a disseminação destes microrganismos entre lotes e a unidade de abate de modo a impedir que tais problemas atinjam o consumidor. Constatou-se que não ocorreu interferência da estação do ano no grau de contaminação por Campylobacter e Enterococcus dos ambientes nos sistemas de criação convencional e automatizado. Mediante as respostas obtidas nos questionários e na avaliação visual in loco das granjas notou-se que as más condições de higiene associada à ausência de um programa de biossegurança são fatores que podem permitir incidência de alta contaminação por diferentes microrganismos. Não foi detectada a presença de Campylobacter e Enterococcus nas análises realizadas após o período de vazio sanitário do galpão, nos dois sistemas de criação. Observou-se ainda que independente do sistema de criação utilizado e estação do ano, foi possível detectar Campylobacter e Enterococcus ao longo do período de criação das aves. Na identificação bioquímica, as cepas de Campylobacter foram identificadas como C. jejuni. Já em relação as cepas de Enterococcus, 90% dos isolados foram E. faecium e 10 % E. faecalis. Na avaliação do perfil de resistência de C. jejuni, as maiores percentagens de resistência foram observadas para os antibióticos sulfonamidas, tetraciclina, eritromicina e penicilina. Para as cepas de Enterococcus faecium e Enterococcus faecalis a maior percentagem de resistência foi observada para o antibiótico penicilina. Os resultados obtidos sugerem a adoção de medidas de controle visando reduzir a contaminação com estes patógenos desde o incubatório, na granja e na indústria de processamento, de tal forma que a criação de um programa de treinamento de mão de obra e a adoção de boas práticas agropecuárias possa interromper ou minimizar o ciclo de contaminação pelos patógenos.
