Resumo: The aim of the present work was a comparative analysis of the cleaning process applied to work clothes worn by food handlers in the meat processing industry in two types of laundries, proprietary and third party, and also to verify the perception of both managers and food handlers as to the quality of the service provided. Studies show that the cleaning process is more effective when carried out in a third party laundry, although the durability of the clothing is longer when processed in-house. For this reason, the study was carried out in two industrial food handlers, the first being located in a town of Zona da Mata MG, that uses its own laundry for cleaning work clothes, and the other located in the city of Belo Horizonte using a third party laundry. Baseline data was obtained from structured interviews and further data was collected by direct observation. The work clothes were sent to a laboratory for analysis of the textile composition, and the supplied results gave a descriptive and comparative analysis of the garments. The principal results indicated that satisfaction with the cleanliness of the clothes depended on the procedures adopted, considering the physical environment of the laundry, the operational flow of the process and the working systems implemented by the laundry. Thus, a well structured process will guarantee that the work clothes will be free of apparent soiling and in a better state of repair, which, in turn, contributes to the user s satisfaction. In the company which carries out its own cleaning, the managers and handler s perception of the cleaned garments was not satisfactory, due to their appearance and poor state of repair. In the case of the company that makes use of third party cleaning services, the managers and handler s perception was more positive, because they consider that the garments are properly cleaned, when judged by appearance, cleanliness, smell and state of repair. Therefore, it was considered that the option for using a third party cleaning service is the most appropriate choice, because this kind of laundry has the physical capacity to accomplish the required service; qualified personnel to administer the service; an efficient wash process, resulting in garments without stains or smells, and with the users identification clearly marked; the garments are always repaired, thus giving a better appearance, which in turn will better reflect the quality of the product returned to the customer. However, it must be noted that the results obtained in this case study are specific to the present work and are not a generalization.

However, it must be noted that the results obtained in this case study are specific to the present work and are not a generalization.O presente trabalho objetivou analisar comparativamente o processo de higienização das roupas profissionais dos manipuladores das indústrias alimentícias em dois tipos de lavanderias, própria e terceirizada, bem como verificar a percepção dos gerentes administrativos e dos manipuladores de alimentos destas indústrias quanto aos resultados dos serviços prestados. Estudos apontam que o processo de higienização pode ser mais eficaz quando realizado em lavanderias terceirizadas, embora a durabilidade das peças seja maior quando processadas em lavanderias próprias. O presente estudo foi realizado em duas indústrias alimentícias, uma situada em um município da Zona da Mata MG e que utiliza lavanderia própria para higienização das vestimentas profissionais e a outra, situada na Região Metropolitana de Belo Horizonte e que terceiriza esse tipo de serviço. Os dados foram coletados utilizando-se de observações diretas e entrevistas fundamentadas em um roteiro estruturado. A análise da composição têxtil das roupas profissionais foi feita mediante testes laboratoriais, sendo realizado, ainda, análise descritiva e comparativa dos resultados destes testes. Os principais resultados indicaram que a satisfação com a higienização de roupas depende do procedimento adotado, considerando o ambiente físico da lavanderia, o fluxo operacional das atividades desenvolvidas e os sistemas de trabalho implementados pela mesma. Assim, um processo melhor estruturado irá garantir roupas profissionais isentas de sujidades aparentes e em melhor estado de conservação, o que, conseqüentemente, contribui para a satisfação do usuário. Na indústria com serviço de higienização próprio, a percepção dos gerentes e dos manipuladores quanto ao resultado final da higienização de suas roupas não se revelou satisfatória, devido ao fato das roupas apresentarem aparência e estado de conservação precários. Por outro lado, a percepção dos gerentes e dos manipuladores da indústria que terceiriza este serviço de higienização, apresentou mais positiva, pois consideram que as roupas são devidamente higienizadas, a julgar pelos aspectos de aparência, limpeza, cheiro e manutenção. Portanto, a opção pelo serviço de higienização terceirizado foi considerada a mais adequada, pelo fato desta lavanderia observada apresentar uma estrutura física condizente com o serviço realizado; presença de profissionais capacitados na gestão do serviço; processo de lavagem mais eficiente, resultando em roupas sem manchas, sem cheiros, personalizadas, sempre reparadas e, conseqüentemente, com melhor aparência, o que pode repercutir na qualidade dos produtos alimentícios oferecidos aos consumidores.
