Resumo: Four experiments were carried, and the first trial was conducted to evaluate the effect of different tannins on the amount and quality of RUP of different foods rich in high biological value proteins. The other 3 trials (2, 3 and 4 chapter) was conducted to evaluate the effects of replacing traditional soybean meal to soybean meal treated with tannin on intake, digestibility, performance, carcass traits, yield of commercial carcass cuts, meat quality and fatty acid composition of beef bulls finished on feedlot fed high concentrate diets (84% of DM). Bulls were fed with cracked corn, whole cottonseed and sugar-cane bagasse in natura, soybean meal treated with CT (SBMT) and traditional soybean meal (SBM). The treatments consisted of 4 levels of replacement of soybean meal whith soybean treated with CT (0, 33, 66, and 100%) and one treatment with 2.5% of SBMCT (relative to 33% of SBMT) but without SBM, which was replaced by urea and corn (with the same level of CP of soybean meal) (SBM+U). To the trial 2, It was used five Nellore bulls, with 290 ± 11.2 kg body weight, fitted with rumen and abomasum cannula. To the trial 3 and 4, Forty-two crossbred Nellore bulls were used in the study, with an average initial body weight of 242.6 ± 5.12 kg. On trial 2, the ether extract and NDFap intake were the only parameters related to food intake affected (P<0.05) by replacing the conventional soybean meal (SBM) by soybean meal treated with tannin (SBMT). Ruminal and intestinal digestibility were linear (P<0.05) only for crude protein (CP). Rumen undegraded protein intake and metabolizable protein intake showed increased linear (P<0.05) with the substitution SBM by SBMT. Rumen degradable protein intake and microbial protein (g/day) showed linear decrease (P<0.05), with the substitution SBM by SBMT. On trial 3, no significant effects (P>0.05) of treatments were observed for some of the variables evaluated: average daily gain, EBW gain, carcass daily gain and carcass yield in relation to body weight. On the other hand, dry matter intake (DMI), rib fat thickness (RFT) and flank yield decreased linearly (P<0.05). Feed conversion (FC) had a quadratic behavior (P<0.05) with better FC with 60% with the substitution SBM by SBMT. On trial 4, no significant effects (P>0.05) of treatments were observed for the profile of fatty acids in abomasal digesta. On muscle was observed only differences (P <0.05) for stearic acid (C18: 0) and monounsaturated fatty acids. To profile of fatty acid deposited in subcutaneous fat showed increased linear (P<0.05) with the substitution SBM by SBMT. There was no interaction (P>0.05) between the treatments and days of storage of beef steaks. No difference was observed between treatments for beef color variables (P>0.05). There was an interaction between storage time and treatments for TBARS (P<0.05). Differences were observed between the shelf life only for treatments 0, 66% and SBM+U treatment. The replacement traditional soybean meal to soybean meal treated with 2.5% of tannin (85% of condensed tannin and 15% of hydrolysable tannin) in high concentrate diets implies in changes in the composition of the animals gain by increasing the rate of gain of muscle tissue in the carcass. However, at the same time causes reduction in dry matter intake, promot better feed conversion. And implies changes in fatty acid profile, especially subcutaneous fat, with no changes on meat quality.

And implies changes in fatty acid profile, especially subcutaneous fat, with no changes on meat quality.Foram realizados quatro experimentos, onde inicialmente objetivou-se avaliar os efeitos de diferentes tipos de tanino sobre a quantidade e qualidade da PNDR de diferentes alimentos proteicos. Posteriormente avaliar a inclusão do alimento que apresentasse melhor resposta no experimento 1 sobre os parâmetros metabólicos (Capítulo 2) desempenho produtivo (Capítulo 3) e características quantitativas da carne (Capítulo 4) de animais bovinos Nelore super-precoces alimentados com dietas com alto teor de concentrado. No 1o experimento foram avaliados o farelo de amendoim (FA), farelo de soja integral (FSi) e farelo de soja normal (FS). Foram analisados 54 tratamentos a partir da combinação de três alimentos proteicos (FA, FSi, FS), três misturas de tanino (tipo A, B e C), quatro níveis da mistura de tanino ao alimento (0%, 1%, 2,5% e 5% de inclusão) e umedecimento ou não da amostra. As amostras foram analisadas seguindo a técnica de três estágios. A divergência do valor nutricional protéico, baseada em variáveis discriminatórias entre os grupos, foi estimada por meio de análise de agrupamento. Foram formados oito agrupamentos, sendo o grupo I o de melhor qualidade e o grupo 8 de pior qualidade. Os tratamentos FS-U A 2,5% e FS-U A 5% (que representam o farelo de soja tratado com tanino condensado tipo A nos níveis de 2,5 e 5% e que passaram pelo processo de solubilização) foram os que apresentaram melhores características de quantidade e qualidade da PNDR. No experimento 2, 3 e 4; as dietas apresentavam relação volumoso/concentrado de 16/84, sendo o farelo de soja substituído pelo farelo de soja tratado nos níveis 0, 33, 66 e 100% na matéria seca, tendo ainda um tratamento FST+U (Farelo de soja tratado mais ureia) onde o farelo de soja foi integralmente substituído por farelo de soja tratado para atender às exigências de PNDR e por uréia para satisfazer os requisitos de PDR. Para o experimento 2 foram utilizados 5 animais delineados em QL 5x5 e para o experimento 3 e 4 foram utilizados 42 bovinos Nelore, machos não-castrados, com peso corporal inicial de 244,5 ± 4,99 kg e idade média inicial de nove meses. No experimento 2, o consumo de extrato etéreo e de FDNcp foram os únicos parâmetros relativos à ingestão de alimentos afetados (P<0,05) pela substituição do farelo de soja convencional (FS) pelo farelo de soja tratado com tanino (FST). Para digestibilidade ruminal e intestinal houve efeito linear (P<0,05) apenas para a proteína bruta (PB), apresentando comportamento decrescente para a digestibilidade ruminal e crescente para a digestibilidade intestinal desse nutriente. A ingestão de proteína não degradada no rúmen e proteína metabolizável apresentou efeito linear crescente (P<0,05) ao substituir-se o FS pelo FST. A ingestão de proteína degradada no rúmen e proteína microbiana no abomaso apresentaram resultados lineares decrescentes (P<0,05), uma vez que substituição do FS pelo FST levou à diminuição desses parâmetros. No experimento 3 houve queda linear no consumo de MS (P<0,05) ao substituir-se o FS convencional pelo FST. Por outro lado, não foi observada redução no ganho de peso e de carcaça (P>0,05). A eficiência de deposição de carcaça teve efeito quadrático com menor nível em aproximadamente 60% de substituição do FS pelo FST. Houve modificação na composição do ganho de carcaça quando adicionou-se FST (P<0,05) com aumento da deposição de tecido muscular e diminuição da deposição de gordura. A AOL aumentou linearmente (P>0,05) com a substituição do FS pelo FST, enquanto a EGS diminuiu linearmente (P<0,05). No experimento 4 não foi observado nenhum efeito estatístico (P>0,05) para o perfil de ácidos graxos na digesta abomasal. No músculo observou-se apenas diferença (P<0,05) para o ácido esteárico (C18:0), e ácidos graxos monoinsaturados. Para os ácidos graxos depositados na gordura subcutânea foi verificado aumento linear na deposição de ácidos graxos poliinsaturados (P<0,05) à medida que substituiu-se o FS convencional pelo FS tratado com tanino. Não houve interação (P>0,05) entre os tratamentos e o tempo de armazenamento de bifes de Longissimus dorsi (LD) para os parâmetros relativos à coloração. Quanto ao tempo de armazenamento, todas as variáveis apresentaram efeito significativo (P<0,05), no entanto, não houve diferença entre níveis de inclusão de tanino e o contraste do tratamento FST+U (P>0,05). Houve interação entre o tempo de armazenamento e os tratamentos experimentais (T. x dia) para a oxidação de lipídeos (P<0,05). Apresentando diferenças entre o tempo de armazenamento apenas para os tratamentos 0, 66% de substituição do FS pelo FST e para o tratamento FST+U (P<0,05). Não foram encontradas diferenças (P> 0,05) para força de cisalhamento, índice de fragmentação miofibrilar, perdas por descongelamento, cozimento e totais na carne. A utilização de farelo de soja tratado com tanino em substituição ao farelo de soja convencional melhora a conversão de PB para PM, provocando modificações na composição do ganho dos animais, aumentando a taxa de ganho de tecido magro na carcaça. No entanto, ao mesmo tempo provoca redução no consumo de matéria seca dos animais, promovendo melhor conversão alimentar.
