Resumo: Changes in food consumption patterns have been occurring in Brazil in recent years, caused by several socio-economic transformations in the structure of the society, which caused significant impacts in nutrients intake and, consequently, in people s health condition. Due to these changes,, which accelerated mainly after the implantation of Plano Real in 1994, it is essential to know the pattern of nutrient intake of Brazilian families, and their evolution over time, starting from the analysis of nutrients consumption sensibility to price and expenditure variations and also to consider the influence of other socioeconomic variables. The main objective in this study was to analyze the pattern of nutrient intake of Brazilian families in the period 1995-2003, based on data from Household Budget Surveys conducted in 1995/1996 and 2002/2003, for the main metropolitan regions of the country. The theoretical framework was based on the theory of consumer demand, and on the alternative approach to the consumer problem, considering that utility is derived from properties or intrinsic characteristics of goods. The functional form used to specify the demand functions was the Almost Ideal Demand System (AIDS). Results show that all socioeconomic variables considered in this study affected significantly the consumption of at least one nutrient. The analysis of consumption sensibility to prices showed that prices influence negatively the consumption of all the nutrients, so much in 1995 as in 2003. Besides, nutrients price variations , in the two years, don't cause large effects on demand. The conclusion for the year 2003 is that families tend to demand relatively more fat, cholesterol and carbohydrates than vitamins and minerals. Thus, it can be deduced that price reduction policies to improve the nutritional quality could not achieve the desired result. It was verified that, as expected, substitutability relations between nutrients, in the two years, are lower than complementarity ones. Regarding expenditures for nutrients intakes, it was verified that for 1995, expenditures influence consumption of all nutrients positively. In 2003 variations in expenditures don't have impacts on consumption of iron, phosphorus and vitamin C. Overall, results show that increases in expenditures lead to increases in nutrient intake, however, the impact on nutritional intake due the variations in expenditure will be less than proportional. On the other hand, one can say that income policies, which allow increases in spending, may be more effective in influencing consumption patterns than nutritional pricing policies. One important conclusion is that consumers will not necessarily consume more nutritious products when food patterns change, which may result in the deterioration of nutrients intake.

Além disso, diversas transformações sócio-econômicas têm ocorrido na estrutura da sociedade, as quais podem causar impactos significativos no consumo de nutrientes e, conseqüentemente, no estado de saúde da população. Diante desse quadro de mudanças, principalmente após a implantação do Plano Real em 1994, torna-se essencial conhecer o padrão de consumo de nutrientes das famílias brasileiras, bem como sua evolução ao longo do tempo, a partir da análise da sensibilidade do consumo de nutrientes frente a variações de preço e dispêndio, e ainda, considerando-se a influência de outras variáveis sócio-econômicas. Assim, este trabalho teve como objetivo principal analisar o padrão de consumo de nutrientes das famílias brasileiras no período de 1995 a 2003, com base nos dados das Pesquisas de Orçamentos Familiares (POF) realizadas em 1995/1996 e 2002/2003, para as principais regiões metropolitanas do país. O referencial teórico utilizado baseou-se na teoria da demanda do consumidor, e na abordagem alternativa do problema do consumidor, considerando que a utilidade deste seja derivada das propriedades ou características intrínsecas dos bens. A forma funcional utilizada para especificar as funções de demanda estimadas neste trabalho foi o Almost Ideal Demand System (AIDS). Os resultados mostram que todas as variáveis sócio-econômicas consideradas neste estudo afetaram significativamente o consumo de pelo menos um nutriente. A análise da sensibilidade do consumo das famílias em relação aos preços mostrou que os preços influenciam negativamente o consumo de todos os nutrientes, tanto em 2003 quanto em 1995. Além disso, variações nos preços dos nutrientes, nos dois anos, não causam grandes efeitos na demanda dos mesmos. A conclusão para o ano de 2003 é que as famílias tendem a demandar relativamente mais gorduras, colesterol e carboidratos, do que vitaminas e minerais. Sendo assim, pode-se deduzir que políticas de redução de preços, com intuito de melhorar a qualidade nutricional, poderiam não alcançar o resultado pretendido. Constatou-se, conforme era esperado, que as relações de substitutibilidade entre os nutrientes, nos dois anos, são menores que as de complementariedade. Em relação às influências dos dispêndios para o consumo de nutrientes, constatou-se que para 1995, os dispêndios influenciam positivamente o consumo de todos os nutrientes. Já em 2003, variações no dispêndio não causam impactos no consumo do ferro, fósforo e vitamina C. No seu conjunto, os resultados apresentados mostram que os aumentos de dispêndio levarão a aumentos no consumo de nutrientes, porém, os impactos no consumo nutricional, devido às variações no dispêndio com nutrientes, serão menos que proporcionais às variações nos dispêndios. Por outro lado, pode-se dizer que políticas de renda, as quais possibilitam aumentos do dispêndio, podem ser mais eficazes na influência de padrões de consumo nutricional do que políticas de preço.
