This work was carried out to evaluate the evolution of the herd and economic indicators of the dairy industry in Pinheiros, ES and the importance of continuing education in the rural property. It consisted of a case study conducted at Sítio Quatro Irmãos, owned by Mr. Nailton Batista dos Santos, during the period July 2005 to March 2008. The property received during this study period the technical and managerial consulting Project Educampo Milk/SEBRAE-ES in partnership with the Agricultural Cooperative in northern Espírito Santo (Veneza). Technical indicators were analyzed: annual production of milk, daily milk production, lactating cows per month, total cows, percentage of dairy cows/total cows, percentage of milking cows/herd, milking cows/area livestock, and others, and the factors were: annual gross income from milk production, annual gross income from milk, effective operational cost of milk, total operating cost of milk, total milk, the gross margin, gross margin/area, net margin activity, total profit, rate return on capital with and without land. These indicators were generated through annotations implemented on the property to control livestock and cost. With that milk production increased from 63 to 230 liters of milk per day, production/cow days from 6.3 to 10.4 liters production/ha.year in 1,159 to 10,492 liters of milk. The economic results were also very favorable with the gross annual income of R$13,114.60 increasing to R$57,668.09 and a net margin of the activity of R$2,582.89 to R$22,594.32. These results allow us to infer that a small landowner can become a major producer of milk, through good planning and well-defined objectives. The viability and success of the dairy farming are due to several factors, however worth highlighting the intensive management of pastures through irrigation and fertilization, along with the pressure of genetic selection through the disposal of animals with low production and the introduction of animal genetics and higher production.
