Resumo: This dissertation aims at an exploratory approach in order to understand the spatial characteristics and the use of the apartments ' kitchens, in particular, the so-called open kitchens, in 2000 to 2015 clipping. Has as focus the Organization of minimum spaces of contemporary apartments, kitchens, and integration of open kitchens living room social space in the design of urban residential apartments with two and three bedrooms, released by the real estate market, in the cutout. The research consists of three parts: a brief history of the household appliance industry, the supply of modernity, attributes and advantages that these products offer the consumer and their impact in the composition of the aggregate design, utilities, dimensions, capacity, attractive colors and finishes. The second part addresses the trajectory of the kitchen in the apartment projects, from the moment of greater verticalization of São Paulo (years of 1950) to the present day and, finally, the third part includes the analysis of projects of residential apartments designed in the period from 2000 to 2015, highlighting the areas for their kitchens closed or integrated linear as to the legislation and standards of construction. In this part also analyzed the results of a questionnaire applied to residents in apartments of São Paulo, seeking to investigate the reasons for the choice of the type of cuisine, advantages and disadvantages of open or closed kitchen typology, culinary habits and customs involved in the use of these kitchens.

O estudo tem como enfoque a organização dos espaços mínimos das cozinhas nos apartamentos contemporâneos, e a integração das cozinhas abertas ao espaço social da sala de estar em projetos de apartamentos residenciais urbanos, com dois e três dormitórios, lançados pelo mercado imobiliário, no recorte considerado. A pesquisa comporta três partes: primeiramente apresentamos um breve histórico da indústria de eletrodomésticos, a oferta de modernidade, atributos e vantagens que esses produtos oferecem ao consumidor e seu impacto na composição das cozinhas ao agregar design, utilidades, dimensões, capacidade, cores e acabamentos atraentes. A segunda parte aborda a trajetória da cozinha nos projetos de apartamentos, desde o momento de maior verticalização da cidade de São Paulo (anos 1950) até os dias atuais. Finalizando, a terceira parte contempla a análise de projetos de apartamentos residenciais projetados no período de 2000 a 2015, destacando-se as áreas destinadas às suas cozinhas lineares fechadas ou integradas quanto à legislação e normas da construção civil.
