Resumo: This dissertation presents and analyses the Bakery Craft Project, initiated in 2001, which belongs to the Social Solidarity Fund of the State of São Paulo, linked to the Civil House Program. It is a program of the first sector which exercises joint education projects and create other kinds of actions that use Gastronomy, especially bakery, as a social inclusion strategy for disadvantaged individuals. Ten people who signed up at Artisan Bakery Barueri workshop, held on 13th May 2014, were taken as research objects during the process. This dissertation was based on qualitative exploratory action research participant, recording how the understanding among participants, teachers and influencers Artisan Bakery was. This program includes theoretical and practical workshops that empower the participant, generating income, sustaining, improving the quality of life, educating them to the world of work and making them citizens. This is a topic that has relevance across disciplines and allows a wider dialogue between different areas of knowledge, rescuing all the teacher's dignity to transform through education and care, people in need, demonstrating the relationships that it establishes with social inclusion and public policy.

Trata-se de um programa do primeiro setor que exercita a educação solidária, criando projetos e outras modalidades de ações que utilizam a Gastronomia, especialmente a panificação, como uma das estratégias de inclusão social dos sujeitos menos favorecidos. Foram tomados como sujeitos da pesquisa 10 indivíduos que se inscreveram na oficina Padaria Artesanal de Barueri, realizada no dia 13 de maio de 2014. Esta dissertação baseou-se na pesquisa-ação qualitativa participante exploratória, registrando como se processou o entendimento entre os participantes, professores agentes multiplicadores e atuantes da Padaria Artesanal. O programa, conta com oficinas teórico-práticas, cujos trabalhos capacitam o assistido, gerando renda, garantido sustento e melhoria na qualidade de vida, além de educá-los ao mundo do trabalho, tornando-os cidadãos.
