Resumo: The objective of this study was to evaluate the effect of diets containing or not cookie meal (CM) and ractopamine (RAC) on performance, carcass traits and meat quality of finishing pigs. Twenty-four Landrace x Moura crossbred pigs were used, 12 castrated males and 12 females (average initial weight of 107.26±5.26 kg). The experimental period was 27 days. The completely randomized design was used, in a 2x2 factorial scheme, with two levels of inclusion of CM (0 and 40%) and two levels of inclusion of RAC (0 and 15 ppm), totaling 4 treatments evaluated in 6 repetitions. Performance, carcass characteristics and meat quality and blood profile were evaluated. There was no isolated effect of CM or RAC for performance variables. CM increased the cold carcass yield and the fat thickness and reduced the cooling loss. RAC increased the loin eye area. There was no isolated effect of CM on meat quality, but the use of RAC promoted an increase in the final pH. CM increased plasma concentrations of total protein and cholesterol. There was no isolated effect of CM or RAC on meat fatty acid composition. There was only interaction between the levels of CM and RAC for plasma concentrations of urea and cholesterol, indicating that the diet based on corn and soybean meal with 15 ppm of RAC decreased the plasma concentration of urea, while the diet containing 40% of CM and 15 ppm of RAC increased the plasma cholesterol concentration. The inclusion of 40% of CM and 15 ppm of RAC in diets for Landrace x Moura crossbred pigs, in a late finishing phase, does not affect performance, carcass characteristics and meat quality. The inclusion of CM changes the serum levels of total protein and cholesterol, while the inclusion of RAC does not interfere in any of the blood variables evaluated. The use of CM in conjunction with RAC supplementation improves the productive aspects of Landrace x Moura crossbreeding slaughtered with high weight.

Foram utilizados 24 animais meio sangue Landrace x Moura, sendo 12 machos castrados e 12 fêmeas (peso médio inicial de 107,26±5,26 kg). O período experimental foi de 27 dias. O delineamento utilizado foi o inteiramente casualizado, em esquema fatorial 2x2, sendo dois níveis de inclusão de RB (0 e 40%) e dois níveis de inclusão de RAC (0 e 15 ppm), totalizando 4 tratamentos avaliados em 6 repetições. Foram avaliadas variáveis de desempenho, características de carcaça e qualidade da carne e perfil sanguíneo. Não houve efeito isolado do RB nem de RAC para as variáveis de desempenho. O RB aumentou o rendimento de carcaça fria (RCF), a espessura de toucinho e reduziu a perda por resfriamento. A RAC aumentou a área de olho de lombo. Não houve efeito isolado do RB sobre qualidade da carne, mas a utilização de RAC promoveu aumento do pH final. O RB promoveu aumento nas concentrações plasmáticas de proteína total e colesterol. Não houve efeito isolado do RB nem da RAC sobre composição de ácidos graxos da carne. Apenas houve interação entre os níveis de RB e RAC para as concentrações plasmáticas de ureia e colesterol, demonstrando que a dieta à base de milho e farelo de soja com 15 ppm de RAC diminuiu a concentração plasmática de ureia, enquanto que dieta contendo 40% de RB e 15 ppm de RAC aumentou a concentração plasmática de colesterol. A inclusão de 40% de RB e 15 ppm de RAC em rações para suínos Landrace x Moura, em fase de terminação tardia, não prejudica o desempenho, características de carcaça e qualidade da carne. A inclusão de RB altera os níveis séricos de proteína total e colesterol, enquanto a inclusão de RAC não interfere em nenhuma das variáveis de sangue avaliadas.
