Resumo: The objective was to evaluate carcass characteristics, weights and yield of retail cuts and carcass measurements of sheep fed different protein sources (castor bean, sunflower cake and sunflower seed) in place of soybean meal as well as the use of ultrasound to estimate parameters carcass. We evaluated 40 carcasses of sheep without defined breed, male, unneutered, with initial average weight of 19.78 ± 1.84 kg in a randomized block design with four treatments and ten repetitions. The animals were slaughtered after 70 days of confinement beyond the period of adaptation. The live weight at slaughter was similar for cows fed diets with soybean meal and castor bean. The cold carcass yield was lower for animals fed sunflower seed compared to those fed soybean meal. The hot carcass yield, true yield and cooling losses were not affected among treatments, with averages of 44.67%, 56.11% and 4.25 %, respectively. With the exception of the saw and loin there was no effect of protein source on yield of retail cuts. The correlation coefficient between measures of loin eye area by ultrasound and taken directly to the carcass was 0.90. The sheep fed sunflower seed had the lowest carcass compactness index. The detoxified castor bean meal has the potential to be used in the diet of sheep as little interference in carcass characteristics, since the inclusion of sunflower seed in the diet negatively influenced carcass characteristics. Ultrasound is an effective tool in the evaluation of loin eye area.

Ultrasound is an effective tool in the evaluation of loin eye area.Objetivou-se avaliar as características de carcaça, pesos e rendimentos dos cortes comerciais e a morfometria da carcaça de ovinos alimentados com diferentes fontes proteicas (torta de mamona, torta de girassol e semente de girassol) em substituição ao farelo de soja, bem como a utilização da ultrassonografia para estimativa dos parâmetros de carcaça. Foram avaliadas 40 carcaças provenientes de ovinos sem padrão racial definido, machos, não castrados, com peso médio inicial de 19,78 ± 1,84 kg em delineamento de blocos casualizados, com quatro tratamentos e dez repetições. Os animais foram abatidos após 70 dias de confinamento, além do período de adaptação. O peso vivo ao abate (PVA) foi semelhante nos animais que consumiram as dietas com farelo de soja e torta de mamona. O rendimento de carcaça fria (RCF) foi inferior para os animais alimentados com semente de girassol em comparação aos animais alimentados com farelo de soja. O rendimento de carcaça quente (RCQ), rendimento verdadeiro (RV) e perdas por resfriamento (PR) não foram influenciados pelas dietas, cujas médias foram 44,67%, 56,11% e 4,25%, respectivamente. Com exceção do serrote e lombo, não se observou efeito da fonte proteica sobre o rendimento dos cortes comerciais. O coeficiente de correlação entre as medidas de área de olho do lombo (AOL) tomadas por ultrassonografia e diretamente na carcaça foi de 0,90. Os ovinos alimentados com semente de girassol apresentaram o menor índice de compacidade da carcaça (ICC). A torta de mamona destoxificada tem potencial para ser utilizada na dieta de ovinos, pois pouco interfere nas características de carcaça, já a inclusão de semente de girassol na dieta influenciou negativamente as características de carcaça.
