Resumo: The fish known as tuna are highly valued in oriental cuisine, the Bigeye tuna (Thunnus obesus) one of the most important species commercially. The quality of tuna is evaluated by various parameters such as meat quality, freshness, texture and fat. Many factors related to capture, as days of onboard storage, months of the year, captured alive or dead, weight and year were related to the purpose of identifying those that affect quality. Therefore, to relate these factors were used a database composed of 21,908 Bigeye tuna, from longline vessels based in Natal, Rio Grande in the North, from January 2007 to April 2010. The quality of Bigeye tuna (meat quality, freshness, texture and fat) were related to the parameters of fish using multiple linear regression analysis in which predictor variables were entered into the model by stepwise procedure (F> 4) . According to this technique it was confirmed that loading live positively affects the quality of the species studied, the amount of storage days was inversely proportional to the quality of the meat, the freshness and texture, that the quality variation between the months the year has two moments of quality reduction, ie in March, April and May, with another fall in November, that quality was higher in the months from December to February and in August and that the greater weight of fish tend to have better quality in all aspects.

A qualidade dos atuns é avaliada por diversos parâmetros como qualidade da carne, frescor, textura e gordura. Diversos fatores inerentes à captura, como dias de armazenamento a bordo, meses do ano, condição de embarque se vivo ou morto, peso e ano foram relacionados com o objetivo de identificar os que interferem na sua qualidade. Portanto, para relacionar esses fatores foram utilizados um banco de dados composto por 21.908 dados de Albacora bandolim, oriundos de embarcações espinheleiras sediadas em Natal, Rio Grande no Norte, do período de janeiro de 2007 a abril de 2010. A qualidade da Albacora bandolim (qualidade da carne, frescor, textura e gordura) foram relacionados com os parâmetros pesqueiros utilizando-se de análise de regressão linear múltipla,em que as variáveis preditoras foram inseridas no modelo pelo processo de Stepwise (F>4).
