Resumo: The objective of this evaluation study was to evaluate the quality of goat's milk in order to establish the best direct and indirect indications for its characterization and better understanding of methods used in the production chain for food security. The work consists of two chapters, the first is about the estimated threshold values for the total bacterial count and physicochemical composition of the milk of goats. Based on the assumption that the best quality milk has a higher concentration of physicochemical constituents, less Somatic Cell Count (CCS), total bacterial count (CBT) and they are related, two questions have been elaborated: milk quality of goat can be evaluated based on the CBT and values lower than the prefabricated by the IN 37 can be suggested as good indicative of the quality of goat's milk. In order to answer questions, the results were initially evaluated together for analysis of simple variance and correlation. The data were then classified into two classes to evaluate the best result to express an overall milk quality: ≤300x10³UFC mL or ≤500x10³UFC mL. After a statistical investigation with a total of 607 samples in nine trials, totaling 5,463 observations, the best limit with the least impairment of the physicochemical composition was ≤300x10³UFC mL. The second chapter aimed to characterize the use of CCS as a good indicator for the diagnosis of subclinical mastitis in goats and its relation with etiological agents that cause this disease. Six herds of dairy goats and 121 goat matrices were studied. The diagnosis of subclinical mastitis was statistically evaluated against the count of somatic cells and identified microbial types. Of the total of 638 samples, 246 samples (38.56%) contained microorganisms. The main types identified were 183 agents of the genus Mycoplasma spp. and 115 Staphylococcus negative coagulase. The mean CCS was 1.132x10³ cells/mL. There is no significant association between bacterial isolation and values obtained in somatic cell counts, samples with and without bacterial growth.

There is no significant association between bacterial isolation and values obtained in somatic cell counts, samples with and without bacterial growth.Objetivou-se com este estudo avaliar aspectos referentes a qualidade do leite de cabra, a fim de estipular melhores indicativos diretos e indiretos para sua caracterização e melhor compreensão de parâmetros utilizados pela cadeia produtiva para a segurança alimentar. O trabalho é composto por dois capítulos, o primeiro aborda os valores limites estipulados para contagem bacteriana total e composição físico química do leite de cabras. Partindo do pressuposto de que o leite de melhor qualidade possui maior concentração de constituintes físico-químicos, menor Contagem de células Somáticas (CCS), contagem bacteriana total (CBT) e que esses parâmetros estão correlacionados, dois questionamentos foram elaborados: a qualidade do leite de cabra pode ser avaliada com base na CBT e valores inferiores aos preconizados pela IN 37 podem ser sugeridos como bom indicativo da qualidade do leite de cabra. No intuito de responder aos questionamentos, os resultados foram inicialmente avaliados de forma conjunta, para análise de variância simples e correlação. Em seguida, os dados foram classificados em duas classes para avaliar qual apresenta melhor limite para expressar a qualidade geral do leite: ≤300x103UFC mL ou ≤500x103UFC mL. Após investigação estatística com total de 607 amostras em nove ensaios, totalizando 5.463 observações o melhor limite com menor comprometimento da composição físico-química foi o ≤300x103UFC mL. O segundo capítulo objetivou caracterizar o uso de CCS como bom indicativo para diagnóstico de mastite subclínica em cabras e sua relação com agentes etiológicos causadores desta enfermidade. Foram estudados 6 rebanhos de cabras leiteiras e 121 matrizes. O diagnóstico de mastite subclínica foi estatisticamente avaliado frente a contagem de células somáticas e tipos microbianos identificados. Do total de 638 amostras 246 amostras (38,56%) continham microrganismos. Os principais tipos identificados foram 183 agentes do gênero Mycoplasma spp. e 115 Staphylococcus coagulase negativa. A CCS média foi de 1,132x103células/mL.
