Resumo: This work had as objective to verify the growth footprint of sugarcane in the State of Goiás and the substitution effect in relation to other food supply cultures between the periods 2003 to 2012. This work was based on the method of shift-share analysis to explain the substitution effect occurred in the composition of crops in Goiás. However, defended proposition is that cultures with strong penetration especially in agribusiness segments had higher substitution effects other cultures that are part of Goiás agricultural system Surveys data were taken from surveys of the state Department of Management and Planning - SEGPLAN, National Food Supply Company - Conab, Syndicate of Ethanol Manufacturing of the State of Goiás - SIFAEG, Industry Union Cane sugar - and ONLY Brazilian Institute of Geography and Statistics - IBGE. The results showed that the footprint of agriculture Goiás presented between 2003 and 2012 a replacement effect (ES) strong positive, especially with crops of sugarcane, corn and soybeans, with the substitution effect (ES) negative in crops of rice, sorghum and beans, this phenomenon indicates evidence of a trend of specialization in terms of agricultural crops in the state of Goiás. The South Mesoregion showed the most dynamic in its agriculture, while Mesoregion North showed lower growth, demonstrating the polarization of productive activities, mainly in the production value.

A proposição defendida é que as culturas com forte penetração, principalmente nos segmentos agroindustriais, apresentam maiores efeitos de substituição, em relação às demais culturas que fazem parte do sistema agrícola goiano. O levantamento dos dados foi feito a partir de levantamentos da Secretaria Estadual de Gestão e Planejamento - SEGPLAN, Companhia Nacional de Abastecimento - CONAB, Sindicato da Indústria de Fabricação de Álcool do Estado de Goiás - SIFAEG, União da Indústria de Cana-deaçúcar – ÚNICA e Instituto Brasileiro de Geografia e Estatística - IBGE. Os resultados demonstraram que a área de ocupação da agricultura goiana apresentou, entre 2003 e 2012, um efeito de substituição (ES) positivo forte, sobretudo nas culturas de cana-de-açúcar, milho e soja, apresentando o efeito substituição (ES) negativo nas culturas de arroz, sorgo e feijão. Esse fenômeno indica uma tendência de especialização em termos de culturas agrícolas em Goiás.
