Resumo: Since deregulation in the coffee sector, competition has been intensified. A new framework is presented, characterized by a high turnover rate, with new entries processing companies, mergers and acquisitions. This framework can insert limits or variances in the competitive dynamics of the chain, in scope of competition, and the possibility of rent appropriation become feasible. Thus, in this work, the objective is comprehend how governance structures present in relationships involving producers and processors in the coffee agribusiness system influence the rent appropriation in North of Paraná. For amplitude theoretical, comprised studies related to the mechanisms of production coordination and agents behavior, involving,therefore, the Transaction Cost Economics (TCE), Measurement Cost Theory (TCM) and Industrial Organization (IO). The field work involved Coffee Agribusiness System in North of Paraná, and comprehension intended was through qualitative research, descriptive,transversal-cut and with a longitudinal perspective, drawing on interviews semi-structured as an instrument of data collection, and content analysis from aggregation of data into categories. The results showed that the market adoption, as governance structure prevalent in interviews, does not align with the attributes and measurable dimensions. Although as a commodity product, it presents specific asset, not costly measurement of dimensions of the attributes that would indicate such conditions as the structure that provides greater efficiency, by ECT and ECM, would be contracts. In integration cases, this is justified by the TCE, since the producers increase their asset specificity, coffee quality, and opt for this structure in order to ensure their property rights. Regarding the market structure, this differs from traditional coffee and specialty coffee fair trade. In traditional coffee case, the prevailing market structure is characterized as competitive structure, being a homogeneous product, has low entry barriers and several producers and processors. In specialty coffee fair trade, the market structure may be characterized as oligopoly differentiated, once the product is differentiated with entry barriers and high concentration of producers. Regarding the possibility of rent appropriation, this was visualized mainly in traditional coffee, by the temporary workers that increase the daily rate at harvest time, taking advantage of producers who depend on their labor during this period, thus appropriating the identify the possibility of quasi-rents appropriation in evaluating the product so slightly lower, allowing different gains in commercialization; it was possible to perceive the Ricardian rent appropriation by processors when add value by blend, paying market price for coffee and winning the disaggregation of products with different quality levels. It was possible to observe the relation between New Institutional Economics and IO theories, due to nonalignment of the governance structure does not present itself as a generator of high transaction costs, unlike the prevailing rational, given the market conditions. It can be inferred that these costs does not occur due to market structure, by low producer concentration, since it is not necessary reputation and there is no dependence between agents.

Um novo quadro se apresentou, caracterizado por um alto índice de rotatividade, com entradas de novas empresas processadoras, fusões e aquisições. Esse quadro pode inserir limites ou desvios na dinâmica competitiva da cadeia, no âmbito da concorrência, e a possibilidade de apropriação de renda se tornar factível. Dessa forma, neste trabalho, o objetivo é compreender como as estruturas de governança presentes nas relações envolvendo produtores e processadores no SAG do café influenciam na apropriação de renda na região Norte do Paraná. Quanto à amplitude teórica, compreendeu estudos relacionados aos mecanismos de coordenação da produção e do comportamento dos agentes, envolvendo, com isso, a Economia dos Custos de Transação (ECT), Teoria dos Custos de Mensuração (TCM) e a Organização Industrial (OI). A realização de trabalho de campo envolveu o Sistema Agroindustrial do Café na região Norte do estado do Paraná, e a compreensão pretendida se deu por meio de pesquisa de natureza qualitativa, do tipo descritiva, com recorte transversal e perspectiva longitudinal, valendo-se de entrevistas semi-estruturadas como instrumento de coleta de dados, e análise de conteúdo a partir de agregação de dados em categorias. Os resultados demonstraram que a adoção do mercado, enquanto estrutura de governança predominante nas entrevistas, não se alinha aos atributos e dimensões mensuráveis. Embora seja um produto commodity, apresenta especificidades de ativos, mensuração não custosa de dimensões dos atributos, que nessas condições indicaria como a estrutura que propicia maior eficiência, pela ECT e ECM, seria contratos. Nos casos encontrados de integração, essa se justifica pela ECT, uma vez que os produtores aumentam sua especificidade de ativos, notadamente a qualidade do café, e optam por essa estrutura com o intuito de garantir seus direitos de propriedade. Quanto à estrutura de mercado, essa se diferencia entre café convencional e café especial fair trade. No caso do café convencional, a estrutura de mercado vigente se caracteriza como estrutura competitiva, por ser um produto homogêneo, possuir baixas barreiras à entrada e diversos produtores e processadores. Já no caso do café especial fair trade, a estrutura de mercado pode ser caracterizada como oligopólio diferenciado, uma vez que o produto é diferenciado com barreiras à entrada e alta concentração dos produtores. Com relação à possibilidade de apropriação de renda, essa se visualizou principalmente no café convencional, por parte dos trabalhadores temporários que aumentam o valor da diária no período da colheita, aproveitando que os produtores dependem de sua mão de obra nesse período, se apropriando assim da quase-renda; por parte dos processadores, foi possível identificar a possibilidade de apropriação de quase-renda na avaliação do produto de maneira levemente inferior, permitindo diferentes ganhos na comercialização; a apropriação da renda ricardiana foi possível perceber, também, por parte dos processadores ao agregar valor pelo blend, pagando preço de mercado pelo café e ganhando na desagregação de produtos com diferentes níveis de qualidade. Foi possível observar a relação das teorias da Nova Economia Institucional com a OI, uma vez que o não alinhamento da estrutura de governança não se apresenta como gerador de altos custos de transação, diferentemente do racional predominante, dado as condições de mercado.
