Resumo: Based on the evidence that regional cuisine have material and symbolic territorialities and considering that gastronomic activities related to tourism have intensified in recent years, this thesis aims to analyze the phenomenon of gastronomic tourism in the light of Brazilian food, emphasizing the narratives who understand food as culture and identity. We examine the complexity of the tourism and gastronomy binomial, first, evidencing the changes in the territorial dynamics resulting from the technological development and the processes of consumption of space as a result of the expression of global markets. In the same way, we approach its symbolic dimension, having the national culinary elements and its intangible heritage as important references. Following these directions, we advance in analyzing the antecedents and the new paths of the Brazilian gastronomy. As a derivation of cultural tourism, and with a great expression in the urban centers, we seek to establish an understanding about the main narratives around the problematic of gastronomic tourism in the present time. We have seen that gastronomic tourism is consolidated when the habit of eating outside was definitively established in Brazilian food culture and that the tourist guides helped to disseminate the idea of trips in search of the regional flavors. In fact, we could have a more comprehensive view of the phenomenon, as well as we recognize initiatives that shows the experience is the main motivating element of a trip. At last, we used the Restaurants Association of good Remembrance to illustrate a possible example of food tourism in Brazil. We have chosen to illustrate this thesis, these restaurants because of the relations between this network, the gastronomic tourism and the experiences lived by consuming the meals of the Plate of Good Remembrance. In this sense, there was the identification and analysis of some initiatives that see experience as the main motivating element of a trip. Food trips are consolidated in those initiatives such as visits to local restaurants, gastronomy festivals or tours of the country's major markets, but above all, it is seen as a movement to enhance the manifestations of national cuisine, promoting an expansion of the understanding of Brazilians about food diversity in his own country, expanding his own identity references.

Para tanto, examinamos a complexidade do binômio turismo e gastronomia, primeiramente, evidenciando as mudanças na dinâmica territorial decorrentes do desenvolvimento tecnológico e dos processos de mercantilização e consumo do espaço, próprios da globalização. Da mesma forma, abordarmos sua dimensão simbólica, tendo como respaldo elementos culinária nacional e seu patrimônio imaterial. Seguindo estes rumos, avançamos ao analisar os antecedentes e os novos caminhos trilhados pela gastronomia brasileira na contemporaneidade. Enquanto uma expressão do turismo cultural, buscamos estabelecer um entendimento sobre as principais narrativas em torno da problemática do turismo gastronômico na atualidade, ao se discutir as principais referências teóricas, os marcos e as políticas públicas implementadas nos últimos anos. Neste sentido, houve a identificação e análise de algumas iniciativas que veem na experiência gastronômica o principal elemento motivador de uma viagem. Observamos que o turismo gastronômico se consolidou quando o hábito de comer fora de casa foi definitivamente enraizado na cultura alimentar brasileira e que os guias turísticos impressos ajudaram a disseminar a ideia de viagens em busca dos sabores regionais. Desta forma, utilizamos a Associação de Restaurantes da Boa Lembrança (ARBL), através de sua rede de restaurantes, como um exemplo de turismo gastronômico no Brasil, discorrendo sobre as relações tecidas entre a referida rede, as viagens e as experiências vividas ao consumir a culinária regional expressa no Prato da Boa Lembrança.
