Resumo: Ten samples of "rapadura" from several areas of state of Ceara were studied with regard to Chemical composition, calcium, iron and phosphorous content. The sanitary condition of "rapadura" production was evaluated by microbiological analysis regarding yeast, molds and total and fecal coliforms. The results indicated the presence of carbohydrates in the range of 87 to 90% and the mineral fraction of 1,33 to 1,82%. The sanitary condition vzere considered sactisfactory for all samples analysed.

The sanitary condition vzere considered sactisfactory for all samples analysed.Foram estudadas 10 amostras de rapaduras, de diferentes localidades cearenses, no tocante ã composição centesimal, sendo que da fração mineral determinou-se cálcio, ferro e fósforo. Além disso, foram verificadas as condições higiênicas das rapaduras, através da pesquisa de bolores, leveduras, coliformes totais e fecais. Na composição centesimal, destacou-se a fração glicídica que variou em torno de 87 a 90%, sobressaindo-se, também, a fração mineral que oscilou entre 1,33 a 1,82%.
