Resumo: The process of globalization of food cultures advances over the territories of the Metropolitan Region of Goiânia (RMG) in a forceful way. In this sense, it is proposed to discuss the dense and complex relationships between local, regional, and global contexts related to the intensification of foreign influences in the productions, habits, and food cultures of the people of Goiás. To this end, we evaluated elements such as: the role of the State in the modernization of agriculture, the mapping of the challenges of eating in the metropolis, the discussion about the paths and perspectives of globalization as well as its influences on urban landscapes, spectacularization of the act of eating, and the notions of food heritage. While we recognize the role of the food industry and its recurrent strategies of taste training and domination of regional cuisines via the cultural industry, we verify the impact of the main modern food discourses and practices in dialogue with the critical cultural perspective in Geography. The research methodology involved questionnaires, semi-structured interviews, fieldwork in the RMG, participant observation in food festivals, theoretical reviews, and critical analysis of the theme dialoguing mainly with the concept of territory. The outline of the thesis points out that food is an important cultural element of societies and that there is an ongoing exercise of power via the appropriation of eating habits and cultures that is almost irreversible, due to the current contours of globalization that advances over food and the meanings individuals attribute to them. In this process, the food industry and fast-food chains try to occupy the dining spaces of modern life, pushing traditional recipes, eating habits, local ingredients, and individuals’ significant moments with food to the background, or just for specific days of occasional rites, reaching people of all ages and social classes, in the countryside and in the cities, but especially in the big cities. There is a constant attempt to appropriate food cultures, where territories that are less strengthened in terms of their unique elements are more vulnerable to the impacts of globalization. As research results, we seek to contribute to structuring the concept of food globalization by noting that this phenomenon has changed the way societies and official bodies of memory and legislation organize our ancestral food heritage. We defend the strengthening of local and regional food culture based on new perspectives on Cerrado foods, in search of sovereign practices that strengthen small producers and expand the possibility of the state of Goiás to produce different foods, in addition to the ongoing monoculture. We recognize that food producers organized in cooperatives, when aware of their political and social role, can claim other directions for agricultural public policies. It is also verified that the Geographical Indications can present themselves as alternatives to social organization and valorization of food production more connected with individuals and the local cultures.

En este sentido, se propone discutir las densas y complejas relaciones entre contextos locales, regionales y globales relacionadas con la intensificación de las influencias extranjeras en las producciones, hábitos y culturas alimentarias de la población de Goiás. Para ello, evaluamos elementos como: el papel del Estado en la modernización de la agricultura, el mapeo de los desafíos de comer en las metrópolis, la discusión sobre los caminos y perspectivas de la globalización y sus influencias en los paisajes urbanos, la espectacularización del acto de comer y las nociones de patrimonio alimentario. Si bien comprendemos el papel de la industria alimentaria y sus estrategias recurrentes de formación del gusto y dominación de las cocinas regionales a través de la industria cultural, verificamos el impacto de los principales discursos y prácticas alimentarias modernas en diálogo con la perspectiva cultural crítica en Geografía. La metodología de investigación involucró cuestionarios, entrevistas semiestructuradas, trabajo de campo de la RMG, observación participante en festivales gastronómicos, revisiones teóricas y análisis crítico del tema dialogando principalmente con lo concepto de territorio. El esquema de la tesis señala que la alimentación es un elemento cultural importante de las sociedades y que existe un ejercicio permanente de poder a través de la apropiación de hábitos alimentarios y culturas que es casi irreversible, debido a los contornos actuales de la globalización que avanza en torno a la alimentación. y los significados que los sujetos les atribuyen. En este proceso, la industria alimentaria y las cadenas de comida rápida intentan ocupar los espacios gastronómicos de la vida moderna, empujando a un segundo plano las recetas tradicionales, los hábitos alimentarios, los ingredientes locales y los momentos significativos de los sujetos con la comida, o solo para días puntuales de ritos ocasionales. , llegando a personas de todas las edades y clases sociales, en el campo y en las ciudades, especialmente en las grandes ciudades. Hay un constante intento de apropiación de las culturas alimentarias, donde los territorios menos fortalecidos en cuanto a sus singularidades son más vulnerables a los impactos de la globalización. Como resultados de la investigación, buscamos contribuir a la estructuración del concepto de globalización alimentaria al constatar que este fenómeno ha cambiado la forma en que las sociedades y los órganos oficiales de memoria y legislación organizan nuestro patrimonio alimentario ancestral. Defendemos el fortalecimiento de la cultura alimentaria local y regional a partir de nuevas perspectivas sobre la comida del Cerrado, en busca de prácticas soberanas que fortalezcan a los pequeños productores y amplíen la posibilidad del estado de Goiás de producir alimentos diferentes, además del monocultivo en curso. Entendemos que los productores de alimentos organizados en cooperativas, conscientes de su rol político y social, pueden reclamar otros rumbos para las políticas públicas agropecuarias. También se verifica que las Indicaciones Geográficas pueden presentarse como alternativas de organización social y valorización de las producciones alimentarias más vinculadas a los sujetos y la cultura local.Der Prozess der Globalisierung der Lebensmittelkulturen schreitet in den Gebieten der Metropolregion Goiânia (RMG) mit Nachdruck voran. In diesem Sinne wird vorgeschlagen, die dichten und komplexen Beziehungen zwischen lokalen, regionalen und globalen Kontexten im Zusammenhang mit der Intensivierung der ausländischen Einflüsse auf die Lebensmittelproduktionen, die Gewohnheiten und die Esskulturen der Menschen aus Goiás zu diskutieren. Zu diesem Zweck werden Elemente untersucht, wie: Die Rolle des Staates bei der Modernisierung der Landwirtschaft, die Kartierung der Ernährungsherausforderungen in der Metropole, die Diskussion über die Wege und Perspektiven der Globalisierung und ihre Einflüsse auf die städtischen Landschaften, die Spektakularisierung des Essens sowie die Begriffe des Lebensmittelerbes. Während wir die Rolle der Lebensmittelindustrie und ihre wiederkehrenden Strategien der Geschmacksbildung und der Beherrschung regionaler Küchen durch die Kulturindustrie verstehen, überprüfen wir die Auswirkungen der wichtigsten modernen Lebensmitteldiskurse und -praktiken im Dialog mit der kulturkritischen Perspektive der Geographie. Die Forschungsmethodik umfasste Fragebögen, halbstrukturierte Interviews, Feldforschung in der RMG, teilnehmende Beobachtung bei Essensfestivals, theoretische Überprüfungen und kritische Analysen des Themas, hauptsächlich im Dialog mit dem Konzept des Territoriums. Die Gliederung der Arbeit verdeutlicht, dass Essen ein wichtiges kulturelles Element von Gesellschaften ist und dass durch die Aneignung von Essensgewohnheiten und -kulturen eine fortlaufende Machtausübung stattfindet, die aufgrund der aktuellen Konturen der Globalisierung, die auf Lebensmittel und die Bedeutungen, die die Individuen ihnen zuschreiben, fortschreitet, nahezu irreversibel ist. In diesem Prozess versuchen die Lebensmittelindustrie und die Fast-Food-Ketten, die Essensräume des modernen Lebens zu besetzen und verdrängen dabei traditionelle Rezepte, Essgewohnheiten, lokale Zutaten sowie die bedeutsamen Momente der Menschen mit dem Essen in den Hintergrund oder nur für bestimmte Tage gelegentlicher Riten, die Menschen aller Altersgruppen und sozialer Schichten, auf dem Land und in den Städten, aber vor allem in den Metropolen erreichen. Es gibt einen ständigen Versuch, sich Esskulturen anzueignen, wobei die Gebiete, die weniger durch ihre einzigartigen Elemente gestärkt werden, anfälliger für die Auswirkungen der Globalisierung sind. Als Forschungsergebnisse wollen wir zur Strukturierung des Konzepts der Lebensmittelglobalisierung beitragen, indem wir feststellen, dass dieses Phänomen die Art und Weise verändert hat, wie Gesellschaften und offizielle Gedächtnisinstitutionen und Gesetzgebungsorgane unser angestammtes Lebensmittelerbe organisieren. Wir setzen uns für die Stärkung der lokalen und regionalen Esskultur ein, indem wir neue Perspektiven auf die Lebensmittel aus dem Cerrado eröffnen und nach souveränen Praktiken suchen, die die Kleinbauern unterstützen und die Möglichkeiten des Bundeslandes Goiás erweitern, jenseits der derzeitigen Monokultur vielfältige Lebensmittel zu produzieren. Wir vertreten den Standpunkt, dass die in Kooperativen organisierten Lebensmittelproduzenten, wenn sie sich ihrer politischen und sozialen Rolle bewusst sind, andere Richtungen für die Agrarpolitik einfordern können. Geographische Herkunftsbezeichnungen können ebenfalls als Alternativen für die soziale Organisation sowie die Aufwertung der Lebensmittelproduktion vorgestellt werden, die stärker mit den Individuen und den lokalen Kulturen verbunden sind.O processo de globalização das culturas alimentares avança sobre os territórios da Região Metropolitana de Goiânia (RMG) de forma contundente. Nesse sentido, propõe-se discutir as densas e complexas relações entre os contextos locais, regionais e globais relacionados à intensificação das influências estrangeiras nas produções, nos hábitos e nas culturas alimentares do povo goiano. Para tanto, avaliamos elementos como: o papel do Estado na modernização da agricultura, o mapeamento dos desafios de se alimentar na metrópole, a discussão sobre os caminhos e perspectivas da globalização e suas influências nas paisagens urbanas, a espetacularização do ato de comer e as noções de patrimônio alimentar. Enquanto entendemos o papel da indústria da alimentação e suas recorrentes estratégias de adestramento do paladar e dominação de culinárias regionais via indústria cultural, verificamos o impacto dos principais discursos e práticas alimentares modernos em diálogo com a perspectiva cultural crítica na Geografia. A metodologia da pesquisa envolveu questionários, entrevistas semiestruturadas, trabalhos de campo na RMG, observação participante em festivais de alimentação, revisões teóricas e análise crítica do tema, dialogando principalmente com o conceito de território. O delineamento da tese aponta que a comida é um elemento cultural importante das sociedades e que existe em curso um exercício de poder via apropriação dos hábitos e culturas alimentares devido aos contornos atuais da globalização que avança sobre as comidas e os significados que os sujeitos atribuem a elas. Nesse processo, a indústria da alimentação e as redes de fast food ocupam de forma crescente os espaços de refeições da vida moderna, empurrando as receitas tradicionais, os hábitos alimentares, os ingredientes locais e os momentos significativos dos sujeitos com a comida para segundo plano, ou apenas para dias específicos de ritos ocasionais, alcançando pessoas de todas as idades e classes sociais, no campo e nas cidades, especialmente nas metrópoles. Verificamos uma tentativa constante de apropriação de culturas alimentares em que territórios menos fortalecidos de seus elementos singulares ficam mais vulneráveis aos impactos da globalização. Com este estudo, buscamos contribuir com a estruturação do conceito de globalização alimentar ao notar que esse fenômeno tem alterado a forma como as sociedades e os órgãos oficiais da memória e da legislação organizam nossos patrimônios alimentares ancestrais. Frente a isso, defendemos o fortalecimento da cultura alimentar local e regional a partir de novos olhares para os alimentos do Cerrado, em busca de práticas soberanas e que fortaleçam a agricultura familiar e ampliem a possibilidade de o estado de Goiás produzir alimentos diversos para além da monocultura em curso. Entendemos que os produtores de alimentos organizados em cooperativas, quando cientes de seu papel político e social, podem reivindicar outros rumos para políticas públicas agrícolas. description The process of globalization of food cultures advances over the territories of the Metropolitan Region of Goiânia (RMG) in a forceful way. In this sense, it is proposed to discuss the dense and complex relationships between local, regional, and global contexts related to the intensification of foreign influences in the productions, habits, and food cultures of the people of Goiás. To this end, we evaluated elements such as: the role of the State in the modernization of agriculture, the mapping of the challenges of eating in the metropolis, the discussion about the paths and perspectives of globalization as well as its influences on urban landscapes, spectacularization of the act of eating, and the notions of food heritage. While we recognize the role of the food industry and its recurrent strategies of taste training and domination of regional cuisines via the cultural industry, we verify the impact of the main modern food discourses and practices in dialogue with the critical cultural perspective in Geography. The research methodology involved questionnaires, semi-structured interviews, fieldwork in the RMG, participant observation in food festivals, theoretical reviews, and critical analysis of the theme dialoguing mainly with the concept of territory. The outline of the thesis points out that food is an important cultural element of societies and that there is an ongoing exercise of power via the appropriation of eating habits and cultures that is almost irreversible, due to the current contours of globalization that advances over food and the meanings individuals attribute to them. In this process, the food industry and fast-food chains try to occupy the dining spaces of modern life, pushing traditional recipes, eating habits, local ingredients, and individuals’ significant moments with food to the background, or just for specific days of occasional rites, reaching people of all ages and social classes, in the countryside and in the cities, but especially in the big cities. There is a constant attempt to appropriate food cultures, where territories that are less strengthened in terms of their unique elements are more vulnerable to the impacts of globalization. As research results, we seek to contribute to structuring the concept of food globalization by noting that this phenomenon has changed the way societies and official bodies of memory and legislation organize our ancestral food heritage. We defend the strengthening of local and regional food culture based on new perspectives on Cerrado foods, in search of sovereign practices that strengthen small producers and expand the possibility of the state of Goiás to produce different foods, in addition to the ongoing monoculture. We recognize that food producers organized in cooperatives, when aware of their political and social role, can claim other directions for agricultural public policies. It is also verified that the Geographical Indications can present themselves as alternatives to social organization and valorization of food production more connected with individuals and the local cultures.
