Resumo: The present dissertation aims to present an analysis of the sociocultural context of workers and consumers who are interlocutors related to the cuisine of “Pit Dog” on Rua 10 in Goiânia. To carry out this qualitative research, ethnography will be used as a lived experience, adapting according to the situation, to identify the variables around this relationship between subjects and cuisine, based on theories that refer to the anthropology of consumption, food and urban throughout the dissertation . The research strategy, through cyberspace and face-to-face space, due to the current context of transition between the pandemic period and an endemic one in our society. From this, this text presents the conditions for the research, experienced field factors, relationships between the researcher and the interlocutors, information obtained in the text that lead to the construction of the notion of memory, tradition, identity and street. These aspects are related to the cuisine of “Pit Dog”, such as being on Rua 10, in Goiânia, changing and adapting to the movement of the city. Thus, the main object of research, the kitchen of “Pit Dog”.

Para realizar esta investigación cualitativa, utilizarás la etnografía como experiencia vivida, adaptándose según la situación, para identificar las variables en torno a esta relación entre los sujetos y la cocina, a partir de teorías que hacen referencia a la antropología del consumo, la alimentación y lo urbano a lo largo del disertación. La estrategia de investigación, a través del ciberespacio y el espacio presencial, debido al contexto actual de transición entre el período pandémico y uno endémico en nuestra sociedad. A partir de esto, este texto presenta las condiciones para la investigación, factores del campo vivido, relaciones entre el investigador y los interlocutores, informaciones encontradas en el texto que conducen a la construcción de la noción de memoria, tradición, identidad y calle. Estos aspectos están relacionados con la cocina de “Pit Dog”, como estar en la Rua 10, en Goiânia, cambiando y adaptándose al movimiento de la ciudad. Por tanto, el principal objeto de investigación, la cocina de “Pit Dog”.A presente dissertação visa apresentar uma análise do contexto sociocultural dos trabalhadores e consumidores interlocutores relacionados a cozinha de “Pit Dog” na Rua 10 em Goiânia. Para executar essa pesquisa qualitativa se utilizará da etnografia enquanto uma experiência vivida, se adaptando conforme a situação, para identificar as variáveis em torno dessa relação entre sujeitos e cozinha, pautando em teorias que remetem a antropologia do consumo, alimentação e urbana ao longo da dissertação. A estratégia para a pesquisa, por meio do ciberespaço e do espaço presencial, por conta do contexto atual de transição entre o período pandêmico para um endêmico em nossa sociedade. A partir disto, nesse texto se apresenta as condições para a pesquisa, fatores do campo vividos, relações entre o pesquisador e os interlocutores, informações obtidas no texto que levam a construção da noção de memória, tradição, identidade e rua. Estes aspectos são relacionados a cozinha de “Pit Dog”, como a estando na Rua 10, em Goiânia, estando em mudança e se adaptando ao movimento da cidade.
