The containment modernistic process of the Brazilian agriculture has caused environmental impacts and social changes in such wide magnitudes that just by themselves, justify studies related to new emerging technologies like the organic agriculture. There are already a great number of practical experiences of agroecological transition well succeeded, mainly in the coffee plant (Coffea arabica L.), in small properties in the South region of Minas Gerais that inspire this research. Experimental design used was the lattice balanced 4x4 with five replications in factorial scheme 3x2x2 and four more additional treatments. Three sources of organic matter were used (castor bean bran, bovine manure and boiler litter) with or without straw of fermented coffee, and with or without the green manuring with Cajanus cajan L., in the line spaces of the coffee crop and pulverizations with the biofertilizer "supermagro". The conventional management had the application of ammonium sulfite and the potassium chloride, and conventional foliar manuring. The used organic management is efficient in the supply of N, P, K, S, Ca, Mg, Mn, B, Zn, Cu, and Fe for the coffee plant in production. The castor bean bran provides a smaller accumulation of total soluble sugars in the leaf, what possibly have influence in the increase of the plant resistance to the attack of the coffee leaf miner (Leucoptera coffeella). The treatments of organic managements show productivity similar to the conventional, due to the existence of nutrient reserves in the soil. There isn´t difference in the microbial biomass because of the organic and conventional managements; therefore, the organic ones have a bigger biological diversity in the populations of arbuscular mycorrhizae fungi.
