Resumo: The objective of this study was to compare the effect of different supplementation strategies for ewes in the gestation and lactation phases, raised in Brachiaria brizantha cv. Marandu, on the productive performance, carcass composition, meat quality and muscle fiber characteristics of their lambs. Sixty F1 Texel ewes, with an average weight of (52 ± 6.48 kg), were used in a completely randomized design, distributed in two treatments (30 ewes per treatment) with different levels of protein energy supplementation for the care of 7, 5% and 15% of the nutritional requirement at different physiological stages. In total, 46 lambs were born, (n = 25) females and (n = 21) males, with (4.40±0.50 kg) birth weight, the females were reintroduced into the herd and the males were evaluated. The diet for the lambs in the growing phase consisted of protein concentrate provided in creep-feeding. In finishing, the lambs received a daily protein concentrate supplement at 1.6% of body weight. The animals were kept on Marandu grass pasture throughout the experimental phase. The lambs were slaughtered at six months of age with an average of (40 kg). Maternal diets did not influence weight gain, body condition score and in vivo measurements of lambs. For carcass traits hot carcass weight (PCQ), cold carcass weight (PCF), hot carcass yield (RCQ), cold carcass yield (RCF), conformation, finish, ribeye area (AOL), subcutaneous fat thickness (EGS) and cut yield showed no significant difference (P<0.05) between maternal treatments. There was no effect between maternal groups for pH, meat color and fat, shear force, sarcomere length, myofibrillar fragmentation index and centesimal composition in lamb meat. However, there was a significant effect (P<0.05) of maternal diet on the area and amount of fiber in the longissimus thoracis muscle, lambs from the 7.5% group had larger areas of fibers (oxidative, glycolytic and intermediary). For the amount of fiber, lambs from the 15% group had more glycolytic fibers while the 7.5% group had more oxidative fibers. The use of protein-energy supplementation for ewes on pasture during pregnancy and lactation was able to change the characteristics of muscle fibers in the fetus. We recommend the use of a level of 7.5% of the nutritional requirement for ewes kept on pasture, as it was enough to guarantee a productive performance without changes in carcass and meat characteristics of lambs raised on pastures of Brachiaria brizantha cv. Marandu.

Marandu.Objetivou - se neste estudo comparar o efeito de diferentes estratégias de suplementação para ovelhas nas fases de gestação e lactação, criadas em Brachiaria brizantha cv. Marandu, sobre o desempenho produtivo, composição da carcaça, qualidade da carne e características das fibras musculares sobre seus cordeiros. Utilizaram-se sessenta ovelhas F1 Texel, com peso médio de (52 ± 6,48 kg), em delineamento inteiramente casualizado, distribuídas em dois tratamentos (30 ovelhas por tratamento) com diferentes níveis de suplementação protéica- energética para o atendimento de 7,5% e 15% da exigência nutricional em diferentes estágios fisiológicos. No total, nasceram 46 cordeiros, (n = 25) fêmeas e (n = 21) machos, com (4,40±0,50 kg) de peso ao nascer, as fêmeas foram reintroduzidas no plantel e os machos foram avaliados. A dieta para os cordeiros na fase de cria foi composta por concentrado proteico fornecido em creep feeding. Na terminação os cordeiros recebendo diariamente suplemento concentrado proteico a 1,6% do peso corporal. Os animais foram mantidos em pastagem de capim Marandu durante toda fase experimental. Os cordeiros foram abatidos aos seis meses de idade com média de (40 kg). As dietas maternas não influenciaram no ganho de peso, escore de condição corporal e medidas in vivo de cordeiros. Para as características de carcaça peso de carcaça quente (PCQ), peso de carcaça fria (PCF), rendimento de carcaça quente (RCQ), rendimento de carcaça fria (RCF), conformação, acabamento, área de olho de lombo (AOL), espessura de gordura subcutânea (EGS) e rendimento de cortes não apresentaram diferença significativa (P<0, 05) entre tratamentos maternos. Não houve efeito entre os grupos maternos para pH, cor da carne e gordura, força de cisalhamento, comprimento de sarcômero, índice de fragmentação miofibrilar e composição centesimal na carne dos cordeiros. No entanto, houve efeito siginificavo (P<0, 05) da dieta materna sobre a área e quantidade de fibra no músculo longissimus thoracis, cordeiros do grupo 7,5% apresentaram áreas maiores de fibras (oxidativas, glicoliticas e intermediarias). Para a quantidade de fibras, cordeiros do grupo 15% apresentaram mais fibras glicolíticas enquanto para o grupo 7,5% cordeiros tiveram mais fibras oxidativas. O uso da suplementação proteico-energética para ovelhas a pasto durante a gestação e lactação foi capaz de alterar as características das fibras musculares no feto. Recomendamos o uso do nível 7,5% da exigência nutricional para ovelhas mantidas a pasto, pois foi o suficiente para garantir um desempenho produtivo sem alterações nas características da carcaça e da carne de cordeiros criados em pastagens de Brachiaria brizantha cv.
