Resumo: | The decrease in oxygen levels during storage of apples in controlled atmosphere (CA) reduces ethylene production, respiration rate and delay fruit ripening. Excessively low O2 levels induce the fermentative pathway, producing fermentation compounds, if in excess, cause flesh breakdown and affect the aroma. Therefore, it is essential to monitor the minimum O2 threshold during storage, using a technique called dynamic controlled atmosphere (DCA). This thesis is composed of five papers, which resulted from studies with the following aims: to evaluate volatile compounds production in apples after storage in controlled atmosphere (CA) with extremely low O2 levels and DCA, and compare them with standard CA; to compare storage in conventional CA with the DCA by the chlorophyll fluorescence technique (DCA-CF) and respiratory quotient (DCA-RQ) with respect to fruit quality maintenance; to determine the optimum RQ level for the different apples cultivars and evaluate the effect of different temperature and CO2 levels during DCA storage on apple quality. Royal Gala , Galaxy and Fuji Kiku apples were stored for 9 months and plus 7 days of shelf life (20 °C) before the quality analyses. In general, the fruit quality maintenance, on basis of storage conditions occur in the following order: DCA-RQ > DCA-CF > standard CA. Despite the higher production of fermentative compounds in the higher RQ levels, there was no greater difference between the levels of RQ studied, although a trend towards better RQ 1.5 on Royal Gala apples. 1-Methylcyclopropene (1-MCP) application in Galaxy and Fuji Kiku apple stored in DCA-RQ does not improve quality, furthermore 1-MCP increases decay incidence in Fuji Kiku apples. The temperature of 2.0 ºC in storage of Galaxy apples in DCA-RQ, maintains better quality than lower temperatures used in standard CA, saving electrical energy with the refrigeration systems of the storage rooms. 1-MCP application in fruits stored in standard CA may be another strategy to increase storage temperature. CO2 levels, in DCA-RQ storage, can be kept at 1.4 kPa for Fuji Kiku apples and up to 1.6 kPa for Galaxy apples. The use of extremely low O2 levels (0.5 to 0.7 kPa) or DCA-RQ decreases some volatile compounds, especially straight chain esters, while other impact compounds of the aroma are not impaired in relation to standard CA storage. Níveis excessivamente baixos de O2 induzem a via anaeróbica da respiração, com produção de compostos da fermentação que, em excesso, causam distúrbios e afetam o aroma. Portanto, é necessário o monitoramento do limite mínimo de O2 durante o armazenamento, sendo esta técnica chamada de atmosfera controlada dinâmica (ACD). Esta tese é composta por cinco artigos científicos que resultaram de trabalhos de pesquisa com os seguintes objetivos: avaliar a produção de compostos voláteis em maçãs após o armazenamento em atmosfera controlada com níveis extremamente baixos de O2 e em ACD e compará-los com a AC convencional; comparar o armazenamento em AC convencional com a ACD pela técnica da fluorescência de clorofila (ACD-FC) e do quociente respiratório (ACD-QR), com relação à manutenção da qualidade dos frutos; determinar o QR ideal para diferentes cultivares de maçãs e avaliar o efeito da temperatura e níveis de CO2, durante o armazenamento em ACD sobre a qualidade de maçãs. Foram utilizadas maçãs Royal Gala , Galaxy e Fuji Kiku , armazenadas por nove meses e mais sete dias de vida de prateleira (20ºC), antes das análises de qualidade. De uma forma geral, a manutenção da qualidade dos frutos em função das condições de armazenamento ocorre na seguinte ordem: ACD-QR > ACD-FC > AC convencional. Apesar de maior produção de compostos da fermentação nos maiores níveis de QR, não houve grande diferença entre os níveis estudados, apesar de uma tendência de melhor manutenção da qualidade de maçã Royal Gala no menor QR (QR=1,5). A aplicação de 1-metilciclopropeno (1-MCP) em maçã Galaxy e Fuji Kiku armazenadas em ACD-QR não melhora a qualidade em relação aos frutos sem a aplicação do produto, inclusive, aumenta a ocorrência de podridões em Fuji Kiku . A temperatura de 2,0 ºC no armazenamento de maçãs Galaxy em ACD-QR mantém uma melhor qualidade que temperaturas mais baixas usadas em atmosfera controlada tradicional gerando economia de energia elétrica com a refrigeração das câmaras. A utilização de 1-MCP no armazenamento em AC convencional pode ser outra estratégia para aumentar a temperatura. Os níveis de CO2, em ACD-QR, podem ser mantidos em 1,4 kPa para a maçã Fuji Kiku e até 1,6 kPa para maçã Galaxy . A utilização de níveis extremamente baixos de O2 (0,5 0,7 kPa) ou ACD-QR causa a supressão de alguns compostos voláteis, especialmente ésteres de cadeia linear, enquanto outros compostos de impacto para o aroma não são prejudicados, quando comparado com a AC convencional.
