Resumo: Spice, medicinal and aromatic plants such as marjoram (Origanum majorana L.) and peppermint (Mentha x piperita L.) are of interest to the food and pharmaceutical industries. The aims of this work were to define the appropriate harvest interval for phytomass production and the season for essential oil production of marjoram and peppermint in summer and winter transplants. Two experiments were carried out for each crop, in an off-ground cultivation system, in a protected environment, the first with summer transplantation and the second with winter transplantation. Fresh and dry matter masses of leaves, branches and shoots were evaluated in a completely randomized design with five treatments, being the intervals between successive harvests of 30, 45, 60, 72 and 90 days from transplantation, with four repetitions. At 12 months after transplantation, the masses of each harvest, in each repetition, were summed to obtain the accumulated production. The daily increment rate was determined by relating the cumulative yield data of the crops (y) versus the days after transplantation (x) over the 12 months, obtaining a linear equation y = bx + a for each repetition, in each interval, where b is the slope of the line, equivalent to the daily increment rate. For the evaluation of the essential oil, a completely randomized design was used, with four treatments, being the seasons of the year. Plants were collected every 30 days, in a period of 12 months, and leaf samples of three consecutive harvest cultivated at the same season were joined. The content, yield and chemical composition of the essential oil were determined. The fresh matter mass of marjoram leaves was higher at 60 and 90 days in the summer transplant and at 72 and 90 days in the winter transplant. The fresh matter mass of peppermint leaves was similar between harvest intervals in the summer transplant and higher at 60 and 90 days in the winter transplant. Os objetivos desse trabalho foram definir o intervalo de colheita para produção de fitomassa e a estação do ano apropriada para produção de óleo essencial de manjerona e menta em transplantes realizados no verão e no inverno. Foram realizados dois experimentos para cada cultura, em sistema de cultivo fora do solo, em ambiente protegido, sendo o primeiro com transplante no verão e o segundo com transplante no inverno. Foram avaliadas as massas de matéria fresca e seca de folhas, ramos e parte aérea, em delineamento inteiramente casualizado, com cinco tratamentos, sendo eles os intervalos entre colheitas sucessivas de 30, 45, 60, 72 e 90 dias a partir do transplante, com quatro repetições. Aos 12 meses após o transplante, as massas de cada colheita, em cada repetição, foram somadas para obtenção da produção acumulada. A taxa de incremento diário foi determinada relacionando os dados de produção acumulada das colheitas (y) versus os dias após o transplante (x) ao longo dos 12 meses, obtendo uma equação linear y = bx + a para cada repetição, em cada intervalo, em que b é a inclinação da reta, equivalente à taxa de incremento diário. Para a avaliação do óleo essencial foi utilizado o delineamento inteiramente casualizado, com quatro tratamentos, sendo eles as estações do ano. Foram coletadas plantas a cada 30 dias, no período de 12 meses, e foram unidas amostras de folhas de três colheitas consecutivas cultivadas na mesma estação do ano. Foram determinados o teor, o rendimento e a composição química do óleo essencial. A massa de matéria fresca de folhas de manjerona foi superior aos 60 e 90 dias no transplante de verão e em 72 e 90 dias no transplante de inverno. A massa de matéria fresca de folhas de menta foi similar entre os intervalos de colheita no transplante de verão e superior aos 60 e 90 dias no transplante de inverno. No transplante de verão, o teor e rendimento de óleo essencial de manjerona foram superiores nas estações verão e primavera. No transplante de inverno, o teor de óleo foi superior no verão e o rendimento no verão e na primavera. O teor de óleo essencial de menta foi superior no verão e o rendimento foi superior na primavera. As colheitas de manjerona em intervalos de 60 dias em transplantes no verão e em 72 dias em transplantes no inverno são mais apropriadas para produção de fitomassa. As colheitas de menta em intervalos de 60 dias, em transplante de inverno, são mais apropriadas para a produção de fitomassa e em transplante de verão em intervalos de 45 dias.
