Resumo: In last years, a great progress in packaging technology has been made trying to maximize the protection that it provides to food and minimize the environmental impact of its disposal on the planet. In this scenario, environmentally packaging friendly has been constantly improving and gaining prominence among industries, such biofilms produced from chitosan, a natural polysaccharide that could form coatings for food application, since it is a non-toxic, biodegradable material with antifungal and antimicrobial properties. The objective of this study was the development and application of active biofilms from chitosan, incorporating active antioxidant compounds obtained from the acerola agroindustrial residue. For this, an extract of acerola was produced from the residue of acerola discarded by pulp industries, giving them new purpose. Biofilms of chitosan (1% w/v) with three different extract concentrations were developed: 0,0% (G1); 1,0% (G2) and 2.5% (G3) of acerola agroindustrial residue, added to the biofilm in order to provide antioxidant characteristics. The produced biofilms were used to pack pieces of boneless poultry and together with a control group (without biofilm/GC), stored at refrigeration temperature (4±1ºC). At pre-determined time intervals, in a first step, the chicken meat was evaluated for lipid oxidation (TBARS), pH and temperature. From the results of TBARS and pH obtained, it was observed that the biofilms of pure chitosan (G1) and incorporated with 1% of extract (G2) achieved better performance. Secondary analyzes were conducted with biofilms G1, G2 and a control group (GC), which were again applied in chicken and evaluated for pH, temperature, TBARS, color, water-holding capacity (WHA), texture profile analysis (TPA) and microbiological analysis. Also, all films were evaluated for DPPH radical sequestration capacity, phenolic content and retention, where it was possible to prove their antioxidant activity. The biofilm that presented the best results was G2 (1% of extract), which even after 20 days of storage (4±1ºC) preserved the sample with low values TBARS (0,385 mgMDA.kg-1), pH of 6,25, temperature of 10.33ºC, high WHA (86.5%), firm texture and maintenance of the microbiological quality, being efficient in retarding the lipid oxidation and maintaining the quality of the product for longer.

Assim, embalagens ecologicamente corretas foram constantemente aperfeiçoadas e ganharam destaque entre as indústrias, como os biofilmes produzidos a partir da quitosana, um polissacarídeo natural que apresenta boa estrutura para a preparação de filmes para aplicação em alimentos por ser um material com características atóxicas, biodegradáveis e propriedades antifúngicas e antimicrobianas inerentes. O objetivo deste estudo foi o desenvolvimento e aplicação de biofilmes ativos a partir de quitosana, incorporando compostos ativos antioxidantes obtidos do resíduo agroindustrial de acerola. Para isto, um extrato de acerola foi produzido a partir do resíduo da acerola descartado por indústrias de polpas, conferindo-lhes novo propósito. Foram desenvolvidos biofilmes de quitosana (1% m/v) incorporados com três diferentes concentrações de extrato: 0,0% (G1); 1,0% (G2) e 2,5% (G3) de resíduo agroindustrial de acerola, com o propósito de conferir características antioxidantes. Os biofilmes produzidos foram utilizados para embalar pedaços de sobrecoxa de frango desossada e junto com um grupo controle (sem biofilme/GC), armazenados à temperatura de refrigeração (4±1ºC). Em intervalos de tempo pré-determinado, em uma primeira etapa, o frango foi avaliado quanto a oxidação lipídica (TBARS), pH e temperatura. A partir dos resultados de TBARS e pH obtidos, observou-se que os biofilmes de quitosana pura (G1) e incorporado com 1% de extrato (G2) foram os que obtiveram melhor desempenho. Análises secundárias foram conduzidas com os biofilmes G1, G2 e o grupo controle (GC), sendo estes novamente aplicados em frango e avaliados quanto ao pH, temperatura, TBARS, parâmetro de cor, capacidade de retenção de água (CRA), análise de perfil de textura (TPA) e análise microbiológica. Todos os filmes foram avaliados ainda quanto à capacidade de sequestro de radical DPPH, teor e retenção de fenólicos, onde foi possível comprovar sua atividade antioxidante.
