Nesse sentido, uma abordagem eficaz precisa prever a construção do problema e sua introdução ao estudante, bem como considerar o seu conhecimento prévio aplicado ao problema, sob a mediação do professor. Esta pesquisa objetivou desenvolver estratégias didáticas ativas e investigativas para o ensino da anatomia e da fisiologia do sistema digestório e do processo de alimentação na segunda série do curso técnico de nível médio em Nutrição e Dietética do Centro Estadual de Educação Profissional (CEEP) Professor João Faustino Ferreira Neto - Natal/RN. Foram utilizados como pressupostos teórico-metodológicos, os fundamentos da abordagem quali-quantitativa, e enquanto metodologia, a pesquisa-ação. Dentre os procedimentos realizados, estiveram presentes: a observação participante da sala de aula no dia-a-dia; questionário diagnóstico (utilizado como pré-teste e pós-teste); gravações das aulas em áudio e vídeo (com subsequentes transcrições); grupo focal; além de anotações de campo variadas. As aulas contaram com discussões, práticas e vivências diversas, envolvendo os conteúdos de sistema digestório, como a utilização de mapas de conceito, construção de modelos tridimensionais de órgãos e comparação de rótulos alimentares, de modo que essas atividades fossem realizadas como ensino por investigação. A utilização das referidas metodologias foi eficaz durante o processo de ensino aprendizagem, pois minimizou as dificuldades do educando quanto à compreensão e percepção do seu próprio organismo, em particular das estruturas que fazem parte do sistema digestório. Além disso, os saberes prévios dos estudantes a respeito do tema foram ressignificados, aumentando o aporte de conhecimentos e o desenvolvimento de suas habilidades. Ao compreender corretamente o funcionamento do sistema digestório, os estudantes puderam também perceber a importância de uma alimentação saudável para a manutenção do estado de saúde do corpo.
