Resumo: | Rice is one of the most important cereal consumed worldwide, being the main source of energy for 1.2 billion of people. Besides, rate and extension of rice starch digestion can be influenced by different factors, including amylose content and grain processing (parboiling). However, Brazilian rice consumption fell 13.5% in the last few years being pasta a substitute for this cereal. The objective of this work was to evaluate the effects of rice grains with different amylose content (high, intermediated and low) or submitted to parboiling in the rat biological response, as well as to determinate the effect of to replace the rice by pasta. Male Wistar rats were fed with diets containing a) white grains of rice cultivars with high (IRGA 417), intermediate (IRGA 416) and low (Mochi) amylose content; b) white and parboiled grains of rice cultivar IRGA 417; and c) white grains of rice cultivar IRGA 417 and pasta (spaghetti); after cooked, hot-air dried at 50°C and grounded. Amylose:amylopectin ratio significantly affected rice starch digestion in the gastrointestinal tract, being rats fed with high amylose content (IRGA 417) treatment showed lower feed intake, body weight gain, apparent digestibility, postprandial blood glucose response, serum total cholesterol and triglycerides levels and pancreas weight, reduced fecal pH, and higher fecal water content, nitrogen excretion, fasting serum glucose concentration and liver weight. The structural change of rice components caused by parboiling provoked variations in different body metabolic parameters, being rats fed with parboiled rice treatment showed higher body weight gain, feed intake, nitrogen excretion, serum triglycerides and uric acid levels, and pancreas weight, and lower feed conversion, fecal pH, albumin and serum HDL cholesterol than white rice treatment. Pasta replacing rice consumption resulted in rats with lower wet and dry fecal production, nitrogen excretion and serum HDL cholesterol, and higher apparent dry matter digestibility, serum uric acid and total cholesterol levels, and kidney and pancreas weights. |

Sabe-se que a taxa e extensão da digestão do amido neste cereal podem ser influenciadas por diferentes fatores, destacando-se a variação na proporção amilose:amilopectina e o processamento dos grãos (parboilização). Além disso, embora o arroz ainda seja o alimento energético mais consumido na mesa da população brasileira, seu consumo foi reduzido em 13,5% nos últimos anos, sendo o macarrão, seu principal competidor. Neste contexto, a presente pesquisa foi conduzida a fim de avaliar o efeito de dietas elaboradas com grãos de arroz com teores variados de amilose (alto, intermediário e baixo) ou submetidos a diferentes formas de processamento (somente polimento e parboilização); bem como, o efeito da substituição do arroz pelo macarrão em dietas isonutritivas, sobre parâmetros de resposta biológica em ratos. Para isso foram utilizados ratos machos Wistar alimentados com: a) grãos de arroz com alto (IRGA 417), intermediário (IRGA 416) e baixo (Mochi) teores de amilose; b) grãos do cultivar IRGA 417 submetidos a diferentes processamentos (branco e parboilizado), ou c) grãos de arroz branco (IRGA 417) e macarrão tipo espaguete; cozidos, secos em estufa com circulação forçada de ar e moídos. A proporção amilose:amilopectina nos grãos afetou significativamente a digestão do amido de arroz no trato gastrointestinal, sendo que o tratamento com alto teor de amilose (IRGA 417) apresentou menor consumo, ganho de peso e digestibilidade aparente, maior umidade nas fezes e excreção de nitrogênio, reduzido pH fecal, concentração plasmática pósprandial de glicose, colesterol total, triglicerídeos e peso do pâncreas; bem como, maior concentração de glicose no jejum e peso do fígado. As mudanças estruturais nos constituintes do arroz provocadas pela parboilização, levaram a variações em diversos parâmetros metabólicos fundamentais para o organismo, sendo que os animais submetidos ao tratamento com arroz parboilizado apresentaram maior ganho de peso e consumo; menor conversão alimentar; menor pH fecal e maior excreção de nitrogênio nas fezes; menores níveis de albumina e colesterol HDL; maiores concentrações de triglicerídeos e ácido úrico e maior peso do pâncreas do que os animais do tratamento com arroz branco.
